I’m working my way through my Betty Crocker Cooky Book<\/a> and adapting the recipes to be a little bit healthier. This is my version of the Orange Drop Cookie recipe. They were pretty good. This recipe made about 4 dozen cookies.<\/p>\n

2\/3 cups butter butter
\n1\/4 cup coconut sugar
\n1 egg
\n3\/4 cup orange juice
\n2 cups King Arthur gluten free 1 to 1 Baking flour
\n1\/2 tsp baking powder
\n1\/2 tsp baking soda
\n1\/4 tsp salt
\n1\/2 tsp ground cinnamon<\/p>\n

<\/p>\n

Orange Butter Icing:<\/b>
\n2 1\/2 TBS butter, softened
\n1 1\/2 cups confectioner sugar
\n2 TBS orange juice<\/p>\n

<\/p>\n

Preheat oven to 400.
\nMix butter, sugar and egg. Stir in orange juice. Add flour, baking powder, baking soda, salt and cinnamon and mix well.
\nDrop rounded spoonfuls onto greased or parchment paper lined baking sheets. Bake for 10 – 12 minutes.
\nCool.
\nMix together butter, confectioner sugar and orange juice. Frost cookies with icing.<\/p>\n
