They are a basic shortbread cookie with melted chocolate on top. They&#8217;re pretty good.<\/p>\n<p><\/p>\n<p>4 tbs unsalted butter, at room temperature <br \/>\n2 tbs coconut oil <br \/>\n1\/4 cup coconut sugar, plus extra for sprinkling <br \/>\n1\/2 teaspoon pure vanilla extract <br \/>\n1 tbs water <br \/>\n3\/4 cups gluten free all-purpose flour <br \/>\n1\/4 cup buckwheat flour <br \/>\n1\/4 cup ground flaxseed <br \/>\n1\/4 tsp cinnamon <br \/>\n1\/8 teaspoon salt <\/p>\n<p>1 tsp coconut oil <br \/>\n1\/2 cup dark chocolate chunks or chips<\/p>\n<p><\/p>\n<p>Preheat oven to 350. <\/p>\n<p>Mix together the butter, coconut oil, coconut sugar, vanilla and water. <br \/>\nAdd the flour, buckwheat flour, flaxseed, cinnamon and salt and combine. <\/p>\n<p>Roll dough into a log shape about 12 inches long on a floured piece of wax paper. <br \/>\nCut into 1\/4 inch thick slices and put on the baking sheet. <\/p>\n<p>Bake for 8 &#8211; 10 minutes. <\/p>\n<p>When cooled, melt the 1 tsp coconut oil and dark chocolate.
