Gluten Free Chocolate Mug Cake

This is my go to chocolate mug cake recipe.
This recipe is adapted from a gluten free chocolate mug cake recipe at https://www.mamaknowsglutenfree.com/gluten-free-chocolate-mug-cake/.

2 tablespoons coconut oil, butter or ghee
1 TBS coconut flour
1 TBS ground flaxseed
2 TBS gluten free all purpose flour
1 tablespoon coconut sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1 1/2 tablespoons unsweetened cocoa powder
1/4 teaspoon ground cinnamon
1/4 teaspoon pure vanilla extract
1/4 cup water
2 tablespoons chocolate chips of choice

In a mug, melt the butter.
Add the coconut flour, ground flaxseed, gluten free flour, coconut sugar, baking powder, salt, cocoa powder and cinnamon and mix.
Stir in the vanilla and water. Sprinkle the chocolate chips on top.

In a microwave, cook for 90 seconds.
Let sit for 2 minutes.
Optionally, frosten or add a little powdered sugar to the top.

Chocolate Chip Cookie In A Mug

I made this chocolate chip cookie in a mug recipe last night and it was fantastic! It’s definitely going to be my go to recipe for a chocolate chip cookie when I don’t have time to make a whole batch of cookies. The butter gives this a real cookie flavor. I modified this recipe to make the following:

1 – 2 TBS butter, melted
1/4 cup flour
1 TBS brown sugar
1/2 tsp baking powder
1/8 tsp salt
1/4 tsp cinnamon
2 TBS milk
3 TBS chocolate chips

Add the butter to a mug. Put in the microwave and cook for 30 seconds. Add flour, brown sugar, baking powder, salt and cinnamon to the mug. Mix well. Add the milk and chocolate chips. Stir. Put in the microwave and cook for 1 minute 15 seconds.
Let cool and enjoy.

Cinnamon Bun in a Mug

I made this cinnamon bun in a mug recipe last night and it was fantastic! It’s a good quick fix when hungry for a cinnamon bun.

This recipe was slightly modified from this recipe.

MUG CAKE BATTER

1/4 cup all-purpose flour – I used Bob’s Red Mill Gluten Free 1 to 1 Baking Flour
1/2 Tbsp brown sugar
1/4 tsp baking powder
1/8 tsp salt
1/8 tsp cinnamon
1/2 Tbsp butter, melted
2 1/2 Tbsp milk

CINNAMON BUTTER SWIRL

1/2 Tbsp butter, melted
1/2 tsp brown sugar
1/2 tsp cinnamon

ICING
1 Tbsp powdered sugar
1/2 tsp milk

Add the dry batter ingredients to a mug and mix. Add the butter and milk.
Combine the cinnamon swirl ingredients and fold into the batter.
Cook in the microwave for 45 – 55 seconds. Combine the icing ingredients
Let cool for 2 – 3 minutes.
Drizzle the icing ingredients over the top.

Chocolate Mug Cake

This recipe was modified from The Pioneer Woman’s Chocolate Cake in a Mug recipe to use less sugar and gluten free flour.

3 TBS flour, I used gluten free flour
1/2 – 2 TBS sugar
1 TBS cocoa powder
1/4 tsp baking powder
3 TBS milk
2 TBS applesauce, or oil
1/4 tsp vanilla extract
3 TBS chocolate chips
1/8 tsp salt, optional

In a mug, combine the flour, sugar, cocoa powder, and baking powder. Add the milk, applesauce and vanilla. Mix well and stir in the chocolate chips.
Microwave for 90 seconds. Top with whipped cream or vanilla ice cream.

Mixed Berry Fruit Crisp Mug

Tonight’s dessert, so far this is my favorite mug recipe. It is adapted from this Mixed Berry Crisp in a Mug recipe at Food Network.

2 tablespoons quick-cooking oats, I used Bob’s Red Mill gluten free oats
1/2 tablespoon brown sugar
2 tablespoons walnuts, chopped, optional
1 tablespoon all-purpose flour, I used Bob’s Red Mill all purpose gluten free flour
1/4 teaspoon ground cinnamon
1 tablespoon applesauce
3/4 cup frozen mixed berries
Plain or flavored Greek yogurt, for serving

Combine the oatmeal, brown sugar, walnuts if using, flour, cinnamon and applesauce in a large mug.

Place the berries on top of the crumble mixture and microwave on high power for 2 minutes, until the fruit starts to bubble and slightly thicken. Stir to bring the crumble to the surface and serve with a dollop of yogurt on top.
