Chocolate Chip Snowball Cookies

These were a new Christmas cookie that I made this year. They were super good! I modified the original recipe from using pecans to using M & M’s.

5 tbs butter, softened
1/4 cup coconut sugar
1/4 teaspoon salt
1 large egg, room temperature
2 teaspoon vanilla extract
1 cups all-purpose flour
1/4 tsp cinnamon
1/2 cup M & M’s
1/2 cup (6 ounces) chocolate chips

1/4 – 1/2 cup confectioner sugar

Preheat oven to 350.

In a large bowl, cream the butter, sugar and salt until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Gradually beat in flour. Stir in M & M’s and chocolate chips.

Form dough into tablespoon sized balls and roll into confectioner sugar.

Drop onto a greased or parchment paper covered baking sheet.

Bake 15 – 20 minutes.

Let cool for a few minutes and re-roll each cookie in confectioner sugar.

Buckwheat Chocolate Chip Cookies

These are my new favorite low sugar chocolate chip cookie recipe. It uses buckwheat flour which is low glycemic, so it won’t raise your blood sugar high like regular flours. Buckwheat flour can be a little tricky to find in stores. I usually buy Bouchard Family Farms buckwheat flour in Hannaford. It looks like Amazon has a bunch of other buckwheat flour options though.

2 tablespoons butter or ghee
2 tablespoons maple syrup
1/4 cup coconut sugar
1 tablespoon vanilla
1 egg
1/2 cup Buckwheat Flour
1/4 cup ground flaxseed
2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1 cup dark chocolate chunks or chips, I like Aldi’s Belgian dark chocolate chunks

Preheat oven to 350.
Line a cookie sheet with parchment paper or grease a cookie sheet.

Soften the butter or ghee.
Stir in the maple syrup, coconut sugar, vanilla and egg.
Add the Buckwheat flour, flaxseed, baking powder, salt and cinnamon.
Fold in dark chocolate chips or chunks.
Drop by half tablespoons onto the parchment paper.

Bake for 10 – 12 minutes.

Banana Apple Chocolate Chip Oatmeal Cookies

These are a good alternative, oil free cookie with healthier flours sweetened with just fruit and dark chocolate.

1/2 cup applesauce
2 bananas, mashed
1 tsp vanilla extract
1 1/2 cups oatmeal
1/4 cup coconut flour
1/4 cup buckwheat flour
1/2 cup ground flaxseed
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon

1 cup dark chocolate chips
1/2 cup dried fruit of choice, optional

Gluten Free Oatmeal Chocolate Chip Cookies

2 tbs coconut flour
2 tbs buckwheat flour
1/3 + 1/8 cup gluten free 1:1 flour
1/3 cup flaxseed
1/4 cup + 1/8 cup oatmeal
1/2 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
2 tbs butter, unsalted, softened
2 tbs ghee or additional butter
1/4 cup unsweetened applesauce
1/4 cup coconut sugar
1 egg
1/2 tsp vanilla
1 cup dark chocolate chips

Preheat oven to 375.
In a small bowl, combine coconut flour, buckwheat flour, gluten free 1:1 flour, flaxseed, oatmeal, cinnamon, baking soda and salt.
In a large bowl, beat butter, applesauce and coconut sugar for 2 minutes. Add egg and vanilla and mix on medium speed until well blended.
Add flour mixture and beat on low speed until well blended. Add chocolate chips and stir.
Drop by tablespoons onto cookie sheets sprayed with non-stick cooking spray. Bake 8 – 12 minutes. Makes about 2 dozen.

Low Carb Chocolate Chip Cookies

These were really good and use flours that won’t impact the blood sugar like some gluten free flours do. These flours full of fiber and contain nutrients. Buckwheat flour contains quercetin, copper, manganese, magnesium and phosphorus. Coconut flour has potassium, iron, and is a plant-based protein. Almond flour has manganese, magnesium, copper, phosphorous, calcium and iron.

2 TBS coconut oil, melted
3 TBS maple syrup
1 TBS almond butter
1 tsp vanilla extract
2 TBS water
1 egg
1 cup almond flour
1/4 cup coconut flour
1/4 cup buckwheat flour
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp sea salt
1/2 cup dark chocolate chunks

Preheat the oven to 350.
Combine the coconut oil, maple syrup, almond butter, vanilla and water. Add the egg and whisk until light and bubbly.
In a separate bowl, combine the almond flour, coconut flour, buckwheat flour, baking powder, cinnamon and salt.
Fold the flour mixture into the coconut mixture. Stir in the chocolate chunks.
Spoon tablespoons onto parchment lined or greased cookie sheets.
Bake for 10 – 15 minutes until lightly browned.

Buckwheat Chocolate Cookies

I’ve rediscovered buckwheat flour as an alternative gluten free baking flour. It is a much healthier alternative than some other gluten free flours like rice and potato. It is lower glycemic, so won’t cause a blood sugar spike. Buckwheat is full of fiber and protein. It also contains vitamins and minerals like manganese, magnesium, phosphorus, niacin, zinc, folate, and vitamin B6.
It’s a little different flour to use. It should not be substituted 1:1 for regular flour, but substituting 25% of the regular flour in a recipe should work.

1 cup dark chocolate chunks or chips
2 tablespoons butter
2 tablespoons maple syrup
1/4 cup coconut sugar
1 tablespoon vanilla
2 eggs
1/2 cup Buckwheat Flour
2 tsp baking powder
1/8 tsp salt
1/4 tsp cinnamon
1/2 cup chocolate chips of choice
sea salt for sprinkling, optional

Preheat oven to 350.
Line a cookie sheet with parchment paper or grease a cookie sheet.

Melt the chocolate and butter.
Stir occasionally until melted; stir in maple syrup, coconut sugar and vanilla. Allow to cool for a few minutes.
In separate bowl, stir together the Buckwheat flour with baking powder, salt and cinnamon. Add the cooled chocolate mixture.
Add the eggs. Stir to combine well. Fold in chocolate chips.
Drop by half tablespoons onto the parchment paper. Sprinkle with sea salt, if using.

Bake for 8 – 10 minutes.

Chocolate Chip Coconut Cookies

These are a great, guilt free, small batch of cookies.

2 TBS grass fed butter
2 TBS coconut oil
2 TBS ghee or butter
1/4 cup coconut sugar
2 eggs
1 tsp vanilla extract
1/4 cup almond flour
1/4 cup coconut flour
1 TBS ground flaxseed
2 TBS cornstarch
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup unsweetened coconut flakes
1 cup dark chocolate chunks or chips
1/4 cup dried fruit, berries or cherries

Preheat oven to 350. Melt the butter. Add the coconut oil and ghee. Mix in the coconut sugar, eggs and vanilla.
Combine the almond flour, coconut flour, flaxseed, cornstarch, salt and cinnamon. Add to the butter mixture.
Stir in the coconut flakes, chocolate and dried fruit.

Drop by tablespoons onto a cookie sheet. Flatten with fork, back of a spoon, bottom of a jar, etc. Bake for 15 minutes.
Makes about 15 – 18 cookies.

Small Batch Chocolate Chip Cookies

This is my new go to recipe for a quick, small batch of chocolate chip cookies.

It is modified from this One Chocolate Chip Cookie recipe at https://www.cookingclassy.com/recipe-one-chocolate-chip-cookie/

2 Tbsp butter
2 Tbs coconut oil
3 tbs cocounut sugar
1 egg
1/2 tsp vanilla extract
1/3 cup (40g) all-purpose flour
1/3 cup filled with 1 Tbs coconut flour + 1 Tbs ground flaxseed + rest of cup filled with gluten free flour
1/8 tsp baking soda
1/2 tsp cinnamon
1/8 tsp salt
1/4 cup chocolate chips, divided
1/4 cup dried berries, optional

Preheat the oven to 350.
In a medium bowl, melt the butter and coconut oil. Stir in the sugar, egg and vanilla. Add the flours, baking soda, cinnamon, salt. Stir in the chcocolate chips and dried berries, if using.
Spoon on to the cookie sheet and bake for 12 – 14 minutes.

Betty Crocker Cookie Series Orange Drop Cookies

I’m working my way through my Betty Crocker Cooky Book and adapting the recipes to be a little bit healthier. This is my version of the Orange Drop Cookie recipe. They were pretty good. This recipe made about 4 dozen cookies.

2/3 cups butter butter
1/4 cup coconut sugar
1 egg
3/4 cup orange juice
2 cups King Arthur gluten free 1 to 1 Baking flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon

Orange Butter Icing:
2 1/2 TBS butter, softened
1 1/2 cups confectioner sugar
2 TBS orange juice

Preheat oven to 400.
Mix butter, sugar and egg. Stir in orange juice. Add flour, baking powder, baking soda, salt and cinnamon and mix well.
Drop rounded spoonfuls onto greased or parchment paper lined baking sheets. Bake for 10 – 12 minutes.
Cool.
Mix together butter, confectioner sugar and orange juice. Frost cookies with icing.

1/4 cup coconut sugar
1 egg
1/4 cup water
1 cup applesauce
1 3/4 cup King Arthur 1 to 1 Baking flour
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
1 apple, peeled and diced

Preheat oven to 400.
Beat butter, both sugars and egg thoroughly. Stir in water and applesauce. Add flour, baking soda, salt, cinnamon, nutmeg and cloves and mix. Stir in diced apples.
Drop rounded spoonfuls onto greased or parchment paper lined baking sheets. Bake for 10 – 12 minutes.
