Granola Version 2

This was another great granola recipe I eat for breakfast and add to yogurt.
This recipe makes a lot, so I made a half batch which was about 8, 1/4 cup servings.

1 cup walnuts
1 cup pecans
1/2 cup almonds
1/2 cup pumpkin seeds
1/4 cup chia seeds
1/4 cup ground flaxseed
1/4 cup shredded coconut
2 tbsp coconut oil
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
1 tsp sea salt

Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the chopped nuts, seeds, shredded coconut, melted coconut oil, sea salt, cinnamon and vanilla extract.
Stir until everything is evenly coated.
Spread the mixture in an even layer on the prepared baking sheet.
Place the baking sheet in the preheated oven and bake for 15-20 minutes, stirring halfway through, until the nuts and seeds are golden brown.
Remove from the oven and let the granola cool.

Granola Version 1

1/4 cup chia seeds
1/4 cup ground flaxseed
2 Brazil nuts (chopped)
1/4 cup unsweetened coconut flakes
1 tbsp coconut oil
1 tbsp avocado oil
1 tsp cinnamon
1 tsp vanilla
1 tsp sea salt

Preheat oven to 325°F. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the nuts, seeds, shredded coconut, melted coconut oil, avocado oil, sea salt, cinnamon and vanilla extract. Stir until everything is evenly coated.
Spread the mixture in an even layer on the prepared baking sheet.
Bake for 15-20 minutes, stirring halfway through, until the nuts and seeds are browned.
Remove from the oven and let cool.
